Lincat Catering Equipment has noticed a steady increase in sales of the Six Burner Range. This is despite the fact that technological advances in equipment such as combination steam ovens and hot holding equipment offer an alternative method of food production. This coupled with the recent economic downturn would lead most peaople to believe that sales would be diminishing. Lincat offer a number of reasons why the Six Burner Range is a popular as ever ( see full report here http://tinyurl.com/22vllo7 ) , however, I also think another factor is that customers are becoming more discerning and are demanding a higher quality of food than some pubs were getting away with a few years ago. As a result there has been a return to more traditional forms of cooking producing a higher quality food offer. The six burner range (and solid top range) has always been the cornerstone of traditional cooking and thus I have found that I am designing more kitchens with more ranges and fewer with griddles, chargrills, fryers and certainly microwaves. Long may this trend continue and signal the end of the ’snip and ping’ (microwave) cooking that has plagued the pub trade for years.
